I am proud to be able to communicate, through my cuisine, the value of authenticity so dear to the Anantara brand. Nothing is more authentic than a moment of sharing in the kitchen and nothing truer than a dish that bonds and speaks to the world.
For the very first time, two Michelin‑starred restaurants within Anantara properties in Europe come together for an exclusive four‑hands dining experience. On 31 May, The White Room in Amsterdam welcomes INEO from Rome for a six‑course dinner, bringing together two chefs, two identities, and two culinary cultures under one roof. This inaugural edition marks the opening chapter of a journey that continues later this year in Rome.
Chef Heros de Agostinis, Executive Chef of INEO at Anantara Palazzo Naiadi Rome embodies a truly global culinary perspective. Born in Rome and shaped by more than 25 years of international experience across Europe, the Middle East and Asia, his cuisine blends Italian foundations with spices, aromas and techniques drawn from a lifetime of exploration. In less than two years, his vision earned INEO a place in the Michelin Guide and, shortly after, a Michelin star.

His expression within the four‑hands menu reflects his distinctive culinary language, where Italian foundations meet spices, aromas and techniques from across the world.
At The White Room, Chef Tristan de Boer tells the story of Amsterdam through flavour. Born and raised in the city, his cuisine reflects its long history as a global trading hub—open, layered and culturally rich. With a Michelin star to his name, Tristan fuses Dutch ingredients with influences from Indonesian, Thai, Japanese and Surinamese cuisines, creating dishes that feel both playful and precise.
I’m delighted to finally welcome Heros to Amsterdam. Since we first met in 2022, we’ve talked about this collaboration, and seeing it come to life now feels truly special.
Together, Chefs Heros de Agostinis and Tristan de Boer present a six‑course menu created in dialogue, where two identities, techniques and cultures come together in one shared culinary experience.
